ISRAELI CUISINE
Israeli cuisine is made of a variety of locally-invented dishes, but also dishes brought back to Israel by Jews from the Diaspora, particularly the Mizrahi, Sephardic and Ashkenazi styles of cooking. The result is a delicious culinary melting pot.
Traditional Israeli food was mainly based on seven ingredients: olives, figs, dates, pomegranates, wheat, barley and grapes. After the Jews of Spain were expelled in 1492, many migrated to countries in the Ottoman Empire. When some returned to Israel, they brought with them new cooking influences, creating foods such as sambousek, vegetable gratin, stuffed vegetables, and rice and bulgur pilafs.
Today, Israeli cuisine often involves foods commonly eaten in other Middle Eastern countries, such as falafel, hummus and couscous. However, due to migration and the Jewish diaspora, types of cuisines from all over the world can be found in Israel today.
